I love mojitos! This Mojito Quinoa Salad is reminiscent of the the flavors of this favorite Cuban cocktail, but minus the rum. 🙁 Although I’m sure you could add rum to this too! 🙂 This quinoa dish is sure to cool you off during the hot summer days. It’s soooo hot in L.A. right now! The air conditioner is on full blast or else I’m sweating full blast, one or the other. I love this part of the summer though. My birthday has passed (read my previous post for more about that!), there’s one more month of “fun” before school starts, at least when I was in school there was, and college football kicks off in about a month. I can’t wait to see what my Auburn Tigers do this year!! This quinoa salad is perfect for late summer gatherings and for the football tailgates starting up soon!
Sometimes I find quinoa dishes to be a little bland, but not this one. This quinoa recipe is super quick and easy to make and the mint and lime give it a zesty flavor. Golden raisins and maple syrup give it some sweetness and the coconut adds some healthy fat and flavor. Of course, quinoa is full of protein and fiber but is gluten-free, a win, win, WIN!
I like to eat this salad hot as a side when I first make it, but then I refrigerate it and eat it cold the rest of the time. Want to make this a meal? Just add a protein serving and a side of green veggies like steamed green beans or asparagus and you have a healthy, protein-packed balanced meal that’s super-delicious!
Quinoa is a hot food right now and with good reason. It’s so versatile, it can be eaten cold or hot, as a side dish, mixed in a a salad, a casserole, a soup, etc. Plus it’s low-fat, gluten-free and full of fiber and protein.
