I’m usually cooking for one and I love making dishes where I put in the time once and eat several times. That’s what I do with this Curried Chicken Salad. It’s easy to make and can be served different ways. I like it served in endive leaves for a snack or light lunch. If I want something more substantial, I’ll chop up Lacinato kale and top it with a large scoop of this salad. The Paleo mayonnaise in the chicken salad is enough of a “dressing” for the kale. This is a healthy dish full of protein, veggies, fruit and refreshing mint.
