I love tomatoes!! As I mentioned in my gazpacho post earlier this week, it’s the peak of tomato season. With that in mind, I feel it’s my duty to create as many tomato recipes as possible before the season ends. This BLT Gnocchi is one of my favorite recipes to date! Besides being yummy and delicious, it’s a super quick-and-easy recipe to make, but it comes across as something more fancy-pants. If you’re looking for a dish to impress some summer dinner guests, this is it!
I’ve added a little twist to the flavors of bacon, lettuce and tomato. The lettuce I used in these pictures is Sorrel. Sorrel pretty much falls in the middle between an herb and a green and the leaves have a lemony flavor. I learned about Sorrel at my farmer’s market and wanted to find some uses for it. It’s hard to find, so unless you have a local farmer’s market that sells it, you’ll want to use another green such as arugula which will have a peppery flavor or chopped Romaine. The recipe has lemon zest and lemon juice, so you’ll still get the lemon flavor even with a different type of lettuce.
You can make this dish Paleo if you use Paleo-friendly gnocchi and Paleo bacon. That’s how I make mine, however, it will be delicious whether you go that route or not.
